Jen's Beef Roll-Ups
1 lb. thinly sliced deli roast beef
1/2 cup green olives
1 medium red pepper
4 oz. herb flavored cream cheese
8 oz. regular cream cheese
Pkg. (8 or 10 count) large flour tortillas
Finely chop green olives and red pepper (food processor works well, but not
necessary). Combine with cream cheeses. Spread cream cheese mixture
evenly over one side of each tortilla and place a generous covering of deli
roast beef over cheese layer and add another cheese layer on top. Roll up
tightly and refrigerate several hours (preferably overnight). Cut each
roll crosswise into roll-ups and serve.
