Lemon Lovers Meat Loaf
(Lemon juice & lemon slices add tang to this meatloaf)
from "Someone's In The Kitchen" Gourmet Meatloaf Recipes

Yield: 6 servings

Cooking time: approximately 15 to 20 minutes on HIGH in the microwave.
Using probe or instant readout thermometer should read 170 degrees.

Topping Sauce:
1 cup of your favorite barbecue sauce
OR
mix together in a small bowl:
  • 2/3 cup ketchup
  • 3 tablespoons brown sugar
  • 1 teaspoon dry mustard
  • 1/4 teaspoon allspice
  • 1 dash ground cloves
Meat Loaf:
  • 1 1/2 pounds ground chuck
  • 3 slices day-old bread
  • 1 egg, slightly beaten
  • 1/4 cup lemon juice, fresh or bottled
  • 1/2 cup chopped onion
  • 2 teaspoons beef bullion granules
  • 6 very thin lemon slices
Mix and mold into a donut-shaped (hole in center) round, flat loaf in a 9-inch pie plate.  Frost with 1/2 of the sauce.  Arrange 6 slices of lemon around on the top.  If microwaving, cover with plastic wrap leaving a small side vent. Let rest 5 minutes to firm before serving.  Drizzle with remaining sauce before serving

OR Can be baked in the oven for 1 hour at 350 degrees.

Mini meatloaves: Shape into 6 individual loaves and arrange in 12x8x2-inch dish.  Cover with wax paper and microwave for 4 minutes.  Pour half of sauce evenly over loaves, top each with lemon slice, re-cover, rotate dish 1/2 turn and microwave for 7 to 9 minutes or until done.  Heat and spoon remaining sauce over loaves before serving.
