Sauce:
Garnish:
Combine ground beef and bread crumbs. Mix well. Combine milk, chilies, and taco seasoning. Mix well. Blend both groups. Place mixture in loaf pan. Bake uncovered 1 hour at 350 degrees. Drain well, let stand 10 minutes, drain again. combine remaining ingredients except cheese. To serve, slice meat loaf, top with salsa sauce. Garnish with cheddar cheese. Makes 6 servings. Cook's note: This loaf is an excellent leftover. Wrap in tortilla with cheese and salsa, warm in the microwave.

Brown onions, celery, and garlic in shortening. Add other ingredients. Cook 1 hour on top of stove or bake at 350 degrees for 1 hour. |
