Presto Meat Loaf
& Mashed Potato Pie
from "Someone's In The Kitchen" Gourmet Meatloaf Recipes

Presto Meat Loaf
  • 1/14 pound ground beef, lean
  • 1/4 pound hot Italian sausage (can make by adding 1 teaspoon hot pepper flakes)
  • 1/4 cup Parmesan cheese
  • 1 egg
  • 1 cup fresh bread crumbs
  • 1 tablespoon minced garlic sautéed in 1 tablespoon olive oil
  • 1/4 cup pine nuts or walnuts, crushed (toasting is optional)
  • 1/2 cup chopped fresh basil
  • 1/4 cup shopped fresh parsley
  • salt & pepper to taste

Mix well and place in loaf pan.  Bake in 400 degree oven.  Turn every 10 minutes and check in one hour (possibly 50 minutes) to see if juices run clear.  Let stand 15 minutes before slicing.  May be cooked on grill as well as oven.   Excellent served cold as pate or sandwich meat.

Mashed Potato Pie

Blend in food processor:

  • 1 pound cottage cheese
  • 2-3 cups mashed potatoes
  • 1/2 cup sour cream

Add:

  • 2 eggs
  • 1-2 teaspoon salt to taste
  • 1/8teaspoon cayenne pepper

Fold in:

  • 1/2 cup green onion or 1/3 cup chives
  • 1 clove garlic, minced
  • 1/2 cup grated hard cheese - Romano, Asiago, Parmesan (mix)

Save some cheese to sprinkle on top.  Place all the above into a 9-inch uncooked pie shell to bake at 400-425 degree oven for 50 minutes.
