Beef Quesadillas
Makes 4 servings

  • 1/2 pound lean ground beef - OR - 6 ounces thinly sliced deli roast beef
  • 1 cup shredded Cheddar cheese
  • 1/2 cup thick Taco sauce or chunky salsa
  • 4 flour tortillas (7-inch)
  1. Brown ground beef in skillet over medium heat 8 to 10 minutes or until beef is no longer pink.  Pour off drippings and rinse, if desired.
  2. Sprinkle 1 tablespoon cheese on one side of each tortilla.  Divide ground beef equally (or deli slices) and arrange on top of cheese.  Spread with 1 to 2 tablespoons taco sauce or salsa and top with 1 tablespoon cheese.  Fold tortillas over in half.
  3. Heat skillet over medium heat for 5 minutes.  Heat two quesadillas in ungreased skillet for 2 to 2-1/2 minutes, turning once.  Tortilla should be lightly brown.   Repeat with remaining quesadillas.  Serve with additional salsa and sour cream if desired.
