Beef Industry Council presents:
Herb & Seasoning Blends

Pepper-Herb Mix  /   Herb & Garlic Blend  /  Spicy Seasoning Mix  / Oregon Herb Rub  / Lemon-Herb Seasoning

Pepper-Herb Mix
Preparation time: 5 minutes

  • 2 Tbsp. dried basil leaves
  • 1 Tbsp. each lemon-pepper, onion powder and dried savory leaves
  • 1 1/2 tsp. rubbed sage

Combine all ingredients.  Store, covered in airtight container.   Shake before using to blend.
Yield:  about 1/3 cup.

 

Herb and Garlic Blend
Preparation time:  5 minutes

  • 1 Tbsp. each dried basil and marjoram leaves
  • 2 Tbsp each garlic powder and dried thyme leaves
  • 1 tsp. dried rosemary leaves, crushed
  • 3/4 tsp. dried oregano leaves

Combine all ingredients.  Store covered in airtight container.   Shake before using to blend
Yield: about 1/4 cup.

 

Spicy Seasoning Mix
Preparation time:  5 minutes

  • 3 Tbsp. chili powder
  • 2 Tbsp. each ground coriander and cumin
  • 1 1/2 tsp. garlic powder
  • 3/4 tsp. dried oregano leaves
  • 1/2 tsp. ground red pepper

Combine all ingredients.  store,  covered in airtight container.  Shake before using to blend. 
Yield:  about 1/3 cup.

 

Oregon Herb Rub

  • 1/4 cup salt
  • 2 tsp. each garlic salt and celery salt
  • 1 tsp. each black pepper, onion powder and paprika
  • 1/2 tsp. each dill, sage and rosemary

Moisten surface of meat (1 1/2 - 2 pound roast) lightly with water.   combine seasonings.  Sprinkle 1 tablespoon seasoning mix covering all surfaces of meat: rub well onto meat.  reserve remaining seasoning for future roasts.

Lemon-Herb Seasoning

  • 1 large clove garlic, crushed
  • 1 tsp. grated lemon peel
  • 1/2 tsp. dried thyme leaves
  • 1/4 tsp. pepper

Combine seasoning ingredients; press into all surfaces of beef (approximately 2 lbs.) cook until done.
